Butter Chicken (Instant Pot Recipe)

The Spruce Eats is batting one for one with their Indian recipes! This recipe is so simple and quick. Neither of us had actually tried butter chicken before, so we don't have anything to compare it to, but what we can confidently say- and Jolie's family agrees- is that this recipe is tasty! REALLY tasty.

Although it may seem like an overwhelming amount of ingredients, it's not. Most of them are spices! If we can make the recipe, you can! We are literally dumb and dumber in the kitchen (and also everywhere we go).
Other than ditching the cilantro because of Mia's hatred for it, the only other difference was that we left the chicken out of the sauce for the sole reason that Jolie's Dad is (trying to be) vegan. Jolie is still salty about the cilantro BTW.
For a simple summary, we sautéed the ghee and the onions in the #InstantPot, then slowly added in all of the other ingredients besides the chicken, tomato sauce, and tomato paste. We then lathered on the tomato sauce and laid the chicken thighs flat. We pressure cooked them for 10 minutes, removed the chicken from the sauce, threw the sauce into a blender, and then poured it back into the Instant Pot. We switched it back to sauté mode with low heat and added the tomato paste. 5 minutes later, we added the cream and voila! Naan a Friendly Experience at India Market (that was a pun)
We picked up tandoori naan from India Market on the corner of South Beretania Street and Isenberg Street. It was a pre-made frozen naan that can't be compared to fresh naan, but got the job done! The naan was fine, but the service was not. We're not ones to write negative reviews, but the customer service there was absolutely awful.
We walked in at 5:45 pm and the lady, rather than welcoming us, greeted us with, "we close soon, so make it quick." Our jaws dropped a little, but that didn't break our spirits. We just laughed it off and asked her where the naan was. We then tried to buy four bags of naan and despite there being two of us and the "two bags per person" rule, she made Mia go back outside to the car and get her wallet.
With all of this being said, that lady working was not a reflection of the owners. India Market is still another small business struggling through COVID-19, so if you need naan or any Indian spices, ingredients, or even HENNA, hit them up. They had it all.
